Pineapple Margarita

Another take on a classic, Margarita. I’ve always been an on the rocks person, it takes me half a day to finish a frozen margarita with a heavy brain freeze (no fun!). Pineapple as a fruit is sweet so it blends well with the liquor. Also, we like our margarita with mescal, the sweetness of the fruit along with the spiciness and smokiness of mescal is out of this world. If you are hearing about mescal for the first time, do not stress, I was very late to the game as well. It isn’t for everyone, but if you do happen to like it, I promise, you won’t look back at tequila. If you want to make this drink frozen, use a lot of ice and blend well. If you happen to have picky people in your house (shhh..like my husband)l the classic salt rim plays well with the ingredients.

Pineapple Margarita

Ingredients

  • 3-4 Fresh Mint Leaves

  • 8 big chunks of Pineapple

  • 1/2 Oz Lemon Juice

  • 1/2 Oz Simple Syrup

  • 3-4 Oz Margarita Mix

  • 1-1/2 Oz Tequila or Mescal

Directions

  • In a shaker, add the mint leaves, lemon juice and pineapple chunks and muddle well till you have juiced the pineapple.
  • Add ice and pour in the rest of the ingredients.
  • Shake vigorously for 45 seconds.
  • In a Margarita Glass, rim with salt and set aside.
  • Add ice into the glass and pour the drink with a strainer. Enjoy in Moderation!
