Margherita Flatbread Pizza

My obsession for pizza will never suppress and hence, recreating my own version of a Margarita pizza is as close as I can get to a real pizza, during these unfortunate times. I was inspired by a flatbread pizza video and reused store bought pizza dough that has been long forgotten in my freezer. One pizza dough will roughly make two flat breads, if rolled thinly. Truthfully, this recipe is perfect for a pizza stone, if you have one. Unfortunately, with terrible space planning in my kitchen, I haven’t been able to put my pizza stone to good use, but I plan on it in the near future. What better way to spend date night at home, than with this recipe paired alongside with some delicious margaritas.

Margarita Flatbread Pizza

Ingredients

  • 1-2 Vine Ripe Tomatoes

  • 1 Tbsp Crushed or finely chopped Garlic

  • A few drizzles of fresh Olive Oil

  • Half of store bought pizza dough

  • Handful of Flour to roll the dough

  • Fresh Basil leaves

  • 1 Fresh Mozzarella Ball

  • Salt & Pepper to taste

Directions

  • Thaw the pizza dough from the freezer or follow the instructions on the back of your store-bought dough, accordingly.
  • Chop tomatoes, mozzarella and basil into thin slices and set aside.
  • Roll out the dough lengthwise thinly, using flour as your separation ingredient.
  • In a bowl mix olive oil and garlic and brush it onto the base of the dough.
  • Assemble Tomatoes and then mozzarella and basil on top of the pizza dough.
  • Sprinkle salt and pepper and lightly drizzle olive oil on top.
  • Bake in the 350 degrees pre-heated oven for 12-15 minutes, until the cheese is golden brown and melted.
  • Sprinkle more basil leaves on top, if needed. Enjoy Hot!

Notes

  • Use cherry or other juices tomatoes, if they are in season.
